We have done a big party every Labor day for several years now. The last three or four years we have been cooking a whole hog. I dont care for whole hog cooks. It comes out like oven pig.... hard to get rub to the inside of a hog... too many different cuts of pig on a hog that dont get done at the same time or internal temp. Long story short, we decided to just buy the meat we actually wanted. We ended up with 4 butt roasts. A little over 30 lbs. 2 whole packer cut briskets, 25 lbs. And a even dozen slabs of ribs, both spare and baby backs.... We lit the fires early Saturday morning. Then spent all day cook'n, visit'n, tell'n the tales and drink'n..... (I really like good whiskey)..... As it got closer to sunset everything came together and folks started show'n up..... My sister in law figured we may need a little sign to help some of our slower friends find the farm. She made little brother put this one down by the end of the driveway....

The ribs and briskets came out awesome.... The butt roast for pulled pork samiches always comes out good.... That's a large turkey roasting pan full of sliced brisket...

Ribs never last long at a party but with 12 slabs I was even able to take a few home for Sunday lunch!

The kids had a big time swim'n in the pond on a big ass float'n couch you can get about 15 full grown folks on. Along with a huge tube look'n deal that was about 10' across....

Now after the feast'n was over and the chillins was tended.... The we  built a little fire, got a little louder, drank a little more, and did all the shit Ks folks just seem to do! (Did I mention I really like whiskey?).... It was just like Mardi Gras!!! Had a hell of a time get'n my golf cart home....

Ya'll definitely have the perfect place to have the best picnics/beer fires, etc! Looks like so much fun! AND CAN WE SAY "YUMMY"?

Darn you, Bill -- you made me hungry!  Looks like everyone had a great time.  Love the floats.

Tell us some rub recipes.
